Apple Nut Bread

1-3/4 cups granulated sugar
3/4 cup vegetable oil
3 eggs
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
2 cups fresh apples, peeled and cubed
3/4 cup walnuts, chopped
Shaved walnuts for top

Glaze:
1/2 to 1 cup powdered sugar
2-3 tablespoons orange or lemon juice

Mix all ingredients in a large bowl. Pour into greased two loaf pans. Bake at 350F for 50 minutes to 1 hour. Before removing from oven, drizzle combined glaze ingredients over loaf.

Makes 20 slices or two loaves.

Helpful hint:
Substitute 1/2 cup egg beaters or 3 large egg whites for the 3 eggs. To reduce fat, substitute 1/2 cup applesauce for 1/2 cup of vegetable oil.
