Mexican Spoon Bread

- Combine:
- 1/2 cup cooking oil
- 2 eggs, slightly beaten
- 1 can cream corn
- 1 cup yellow cornmeal
- 3/4 cup milk
- 1 tsp salt
- 1/4 tsp baking soda
- 1-1/2 cups grated cheese
- 1 can pimientos, finely chopped
- 1 grated onion
- 2 pods Jalapeno peppers, seeds removed and finely chopped
Pour into heavy baking dish. Bake 1 hour at 400F. Serve as a side dish like a dressing.
