Preheat oven to 450F (For dark non-stick pans, preheat oven to 425F). Grease muff in cups. Beat egg or egg whites in medium mixing bowl. Add milk and stir to blend. Add muffin mix and cinnamon; stir just until blended. Gently fold in carrots and raisins. Spoon batter into prepared muffin cups, filling each 2/3 foil. Bake 14 to 16 minutes or until golden brown.
Makes 6 to 9 muffins.
