Crawfish Casserole 4

1 stick margarine (1/4 lb)
1 medium onion
1 cup chopped bell pepper
1 cup celery, chopped
2 pods garlic, minced
1 can cream of mushroom soup
1 can Cheddar cheese soup
1 small jar pimentos, chopped
1 bunch chopped green onions
1/3 cup parsley, chopped
1 teaspoon salt
1 teaspoon pepper
2 teaspoons Tabasco Sauce
1/2 cup seasoned bread crumbs
3 cups cooked rice
2 pounds crawfish tails

Preheat oven to 350F. Saute in margarine, onion, bell pepper celery and garlic until soft. Add mushroom soup, cheddar cheese soup, pimentos, green onions, parsley, salt, pepper and Tabasco Sauce. Heat and stir until blended. Add 1/2 cup seasoned bread crumbs, rice and crawfish. Mix well. Spray Pam cooking spray on a 3-quart casserole dish. Pour mixture into casserole dish. Top with extra bread crumbs. Bake at 350F for 30 minutes.
