Eggplant Lasagna Casserole

1 large eggplant
6-8 lasagna noodles
2 cups spaghetti sauce
1-1/2 cups cottage cheese
8 ounces mozzarella cheese,
1/2 cup Parmesan cheese, grated
Oil
Cajun seasoning
Garlic powder

Peel and slice eggplant, lengthwise; salt and set aside. Prepare (boil) noodles according to package directions. Meanwhile, pat eggplant slices dry with paper towel; season with Cajun seasoning. Fry in oil until both sides of slices are brown; drain on paper towel. Spray casserole dish with vegetable oil and pour 1/3 of spaghetti sauce in pan. Add 1/3 of cheeses, cottage cheese, Mozzarella and Parmesan, Top with noodles, then layer of eggplant. Add sauce, cheese, etc., until you have 3 layers, ending with cheeses. Bake in 350F. oven for about 30-40 minutes.
