Veggie Casserole

2 tomatoes
1 large zucchini
1 large potato
2 yellow squash
1 purple onion
1 small green pepper
2 carrot sticks
3/4 cup Parmesan cheese, grated
1 cup bread crumbs

Creole seasoning Vegetable spray Preheat oven to 400F. Spray 13 x 9 x 2 inch casserole dish with vegetable spray. Wash, peel and dice all vegetables. Spray vegetables with vegetable spray. Toss together and pour into casserole dish. Cover with cheese and top with bread crumbs. Bake 45 minutes until vegetables are tender. Serve immediately.
