Preheat oven to 350 F. Combine sweet potatoes, margarine, egg yolks, salt, vanilla, brown sugar, honey and cinnamon. Mix well. Add pineapple, pecans, orange rind. Mix well. Pour into greased (or sprayed with PAM) 9 x l3 x 2 inch pan. Bake at 350F for 20 minutes. Remove from oven.
To prepare meringue: Very slowly add brown sugar and cinnamon to beaten egg whites. Beat until stiff. Spread meringue over casserole. Sprinkle with pecans. Return to oven. Bake 15 to 20 minutes more or until golden brown.
