Sausage Casserole 2

1 lb smoke sausage, sliced 1/4 inch thick
1 lb can whole tomatoes
One - 4 oz can mushroom stem & pieces
1 cup chopped celery
1 cup chopped onion
1 bell pepper chopped
1 clove garlic
1 tsp cooking oil
1 cup uncooked rice washed
Salt & pepper to taste

Put cooking oil in a heavy pot (3 quarts). Add sausage and cook 10 minutes, drain excess oil, add onions, celery, garlic, bell pepper, whole tomatoes & juice, mushrooms & juice. Bring to a boil, season to taste with salt & pepper, add rice, mix well. Lower fire to simmer, put lid on pot & cook 45 minutes. Do not stir while cooking.
