Wild Rice and Mushroom Casserole

1/4 lb butter
1/2 cup chopped onion
2 cup sliced mushrooms
1 cup wild rice
3 cup chicken broth
1/2 tsp fresh ground pepper
1 tbs fresh fennel

In casserole dish, melt butter & saute onions and cook until melted. Add mushrooms, saute. Add all other ingredients and cook on medium for 10 minutes. Preheat oven to 350F degrees. Cover casserole and bake for 1 hour or until rice is tender and broth is absorbed. More fennel may be added. Fennel may be substituted with dried tarragon.
