Yummy Potato Casserole

6 medium potatoes, boiled slightly underdone. Boil with skins on
1 can cream of chicken soup
1 large carton sour cream
1-1/3 cup finely chopped onions, using only a little bit of green top
1/4 cup butter or margarine
1-1/2 cups shredded cheddar

Topping:
1/4 cup melted butter
2 cups crushed cornflakes or crushed potato chips

Mix topping together. Peel potatoes, shred and set aside. Melt butter, combine with sour cream. Add onions and soup, add potatoes and cheese. Put in a casserole dish (sprayed with non-sticking cooking spray). Add topping, bake for 45 minutes at 350F.

Can be prepared the day before.
