Zucchini Casserole 2

4-5 large zucchini
1/2 cup minced onion
2 eggs, slightly beaten
1/2 cup plus
2 tbs grated parmesan cheese
1/2 cup cheddar cheese, grated
18 saltine crackers, crushed
1/2 lb hot bulk sausage
1/4 tsp thyme
Black pepper

Wash squash, trim ends, leave unpeeled. Cook whole in boiling salted water until tender. Drain, reserving 1/2 cup liquid. Chop squash.

While squash is cooking, fry sausage and onion together until sausage is browned and onion is tender. Combine remaining ingredients, including reserved liquid and excluding the two tablespoons cheese and pour into an ungreased casserole dish. Sprinkle the rest of the cheese on top. Bake at 350F for 45 minutes or lightly browned.
