*** With a whisk, beat eggs and milk together. Sift flour, salt and sugar into a bowl and make a hole in the center of the flour mixture. Pour milk mixture into the center of the flour. Whisk till batter is the consistency of heavy cream. Melt butter and add to batter. Add liqueur and mix well. Preheat well-seasoned crepe pan. Pour 2 tbs of batter into center of pan. Tilt to evenly spread batter. Place over heat and cook for around one minute or till batter is set and begins to pull away from the sides. Flip and cook for less than a minute or till second side is golden. Slide from pan. Cool slightly and stuff with filling (see recipes).
