*** Scald 6 cups milk. Mix cornstarch, sugar and salt. Add to scalded milk, stirring until sugar is dissolved. Cook over low heat for 20 minutes, stirring constantly until thickened. Beat eggs and heat in remaining 2 cups milk. Stir hot mixture into egg mixture. Cook over low heat for 10 minutes stirring constantly. Cool and add evaporated milk and 1 tsp vanilla. Chill thoroughly.
Freeze.
Yield: 1 Gallon.
