Using a sharp knife, cut around the inside hole of the cake. Cut around the outside edge in the same manner, leaving one-inch thick walls. Set aside. Make strawberry gelatin. Set in refrigerator until firm. Remove from refrigerator and mix with a fork, breaking up gelatin. Add 12-15 cleaned and sliced strawberries. Whip cream until stiff and fold into strawberry mixture. Pull out the cut portion of the cake making sure there are no breaks on the bottom. Carefully fill the inside with the strawberry filling. Set smaller pieces of cake on top of filling to close cake up. Make frosting according to the directions. Frost cake. Garnish with 6-8 fresh strawberries and mint leaves. Refrigerate uneaten portion after serving.
