Apple Pudding

1 cup white sugar
3/4 cup butter, softened OR soft margarine
1 egg
1 teaspoon soda
1/2 teaspoon salt
2 cups apples, peeled and chopped or sliced thinly
3/4 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 cup raisins
1/2 cup nuts
1 cup flour

Preheat oven to 375F. In medium mixing bowl, cream butter or margarine and sugar. Beat in egg, soda, salt, cinnamon and vanilla extract. Beat in flour by hand. Add nuts and raisins. Mix in apples. Bake in a greased and floured 8 x 8 inch baking dish. Bake at 375F for 1 hour. Serve warm or cooled with your favorite sauce or cool whip.

Serves 6-8.
