Coconut Macaroons 1

2 eggs
3/4 cup sugar
1 tablespoon butter, melted and cooled
1 teaspoon vanilla
1/3 cup unsifted all purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2-2/3 cup coconut

Preheat oven to 250F. Sift the flour, salt and baking powder in a glass or stainless steel bowl. Beat eggs until foamy. Add sugar, beating constantly until thickened and light in color, about 5 minutes on electric mixer. Fold in flour, baking powder and salt. Add butter, vanilla and coconut.

Drop from teaspoon onto greased baking sheets. Turn up oven temperature to 325F and bake mixture for about 15 minutes or until golden brown around the edges. Cool off very well and place in cookie jar or tin, placing waxed paper under cookies.
