Preheat oven to 350F.
Prepare crust:
Blend crumbs, sugar, and margarine with fork and set aside. Fill mini muffin tins with paper.
Filling:
Toss cream cheese, cottage cheese, egg substitute, vanilla, and sugar into blender or food processor and blend until creamy and all cottage cheese lumps are gone.
Assembly:
Place 1 teaspoon of crumbs in bottom of each cup. Press firmly with spoon or fingers. Spoon in approximately 2 teaspoons of filling and bake for 12 minutes. Remove from oven, cool and spoon fruit filling over each (about 2 cherries each). Should make 24 to 36, Refrigerate until ready to serve.
