Australian Pavlova

3 egg whites
1-1/2 cups sugar
1-1/2 teaspoons vanilla
1-1/2 teaspoons vinegar
1 cup whipping cream
1/2 teaspoon vanilla
4 cups sliced fruit strawberries, Kiwi, peaches, pineapple

Bring egg whites to room temperature. Line baking sheet with foil about 8-1/2 inch diameter. Draw circle on foil as a guide. In large bowl, combine egg white, sugar, 1-1/2 teaspoon vanilla, 1-1/2 teaspoon vinegar, and 1/4 cup boiling water. Beat 12 minutes, scraping bowl constantly until it forms stiff peaks. Spread mixture over circle on foil, Shape into shell with back of spoon, making bottom 1/2 inch thick and sides 2-1/2 to 3 inches high. Preheat oven to 450F. Place baking sheet in middle of oven and turn off. Let stand 4 to 5 hours. Do not open oven door. Combine whipped cream and 1/2 teaspoon vanilla. Beat until mixture forms soft peaks. Remove shell from foil and place on serving dish. Spread whipped cream in shell, reserving 1/2 cup to garnish with. Arrange fruit in shell. Put remaining 1/2 cup whipped cream over fruit in center. Cut into wedges and serve immediately.
