Fresh Pear Cake

4 cups fresh pears
2 cups sugar
1 cup chopped nuts
3 cups all purpose flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 tablespoon baking soda
1 cup vegetable oil or apple sauce
2 eggs at room temperature
1 teaspoon vanilla
Streusel Topping (optional)
1 cup chopped nuts
2/3 cup packed brown sugar
1/2 cup all purpose flour
1 teaspoon ground cinnamon
6 tablespoons firm margarine or butter

Preheat oven to 350F. Peel, core and slice pear. Mix with sugar and nuts and let stand for one hour. Add dry ingredients in order listed to fruit mixture. Beat eggs. Add oil or applesauce, vanilla, and eggs. Stir by hand until well blended. Pour batter into a well greased and floured 9 x 13 x 2 inch oblong pan. Bake at 350F for 1 hour.

Topping:
Mix an ingredients until crumbly. Sprinkle on cake and bake as directed. Add whipped topping, if desired. Cut in 2 x 2 inch squares to serve.
