Sweet Potato Bars

1 cup oil
2 cups sugar
4 eggs
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
2 cups sweet potatoes, mashed
2 cups flour
1 teaspoon baking powder
Frosting:
One 8 ounce package cream cheese
1-3/4 cups powdered sugar
1 teaspoon vanilla extract
1 stick butter, softened (1/4 lb)
1 tablespoon milk

Preheat oven to 350F. Blend with mixer and pour into jelly roll pan that has been greased and floured. Bake and cool before frosting. Mix frosting ingredients well and spread on cool bars.

*Yams or pumpkin may be used in place or sweet potatoes

Serves 11-12.
