Lemon and Rice Delite

Crust:
1 cup flour
1 stick butter (1/4 lb)
1 cup, pecans, chopped
Second Layer:
One 8 ounce package softened
Cream cheese
1 cup powdered sugar
1 cup Cool Whip
1 cup cooked yellow rice
Third Layer:
2 cups lemon pudding
2 Cups Coo1 Whip
Yellow Rice Garnish:
1 cup rice, raw
1-1/2 cups water
2 tablespoons sugar
1 tablespoon lemon flavor
1/2 teaspoon yellow food coloring

Preheat oven to 350F.

Crust:
Mix three ingredients well and put into 9 x 12 inch baking pan. Bake at 350F for 30-35 minutes. Cool before adding next layer.

Second layer:
Cream together cream cheese, powdered sugar and Cool Whip. Fold in rice and pour over crust.

Third layer:
Spread lemon pudding over second layer. Top with Whip and garnish with yellow rice.

Yellow Rice Garnish:
Combine raw rice, water, sugar, lemon flavor, and yellow food color. Cook rice as you normally would.

Serves 15-20.
