Pear Cake

2 cups pears (or apples), chopped
2 cups sugar
2 egg whites, beaten stiff
2 egg yolks, beaten
1/2 lb margarine, melted
2-1/2 cups flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon vanilla or almond flavoring
1 cup pecans, chopped (optional)
Sauce: (optional)
1-1/2 cups sugar
3 tablespoons flour
Dash salt
2 cups milk
1 teaspoon vanilla
1 teaspoon butter

Preheat oven to 350F. Beat egg whites until stiff. Fold in egg yolks. Mix dry ingredients together. Combine margarine and, dry mixture; add pears. Stir in prepared eggs and flavoring. May add pecans here. Bake 1 hour in greased bundt pan. Cool 20 minutes on wire rack. Loosen sides, turn onto cake plate.

Sauce:
Mix dry ingredients, add milk and flavoring. Cook until thickened.

Serves: 16.
