Sweet Potato Syrup Cake

5 cups sweet- potatoes, grated
4-1/2 cups sugar
1 teaspoon vanilla
1 cup high grade oil
4 eggs, separated
1/4 teaspoon cinnamon
1/2 cup coconut
1 cup cane syrup
2-1/2 teaspoons nutmeg
1/2 teaspoon cloves
1 teaspoon salt
3-1/2 cups sifted flour
2 teaspoons soda diluted with cup water
2 cups chopped pecans
1/2 cup raisins

Cook potatoes with 1-1/2 cups sugar for about 3 minutes, Cool. Add 1 teaspoon vanilla and set aside. Cream remaining sugar with oil. Add egg yolks and spice. Sift some of flour into bowl and mix. Continue to add flour a little at a time, until all has been blended. Mix soda with water and add to batter along with salt, nuts, raisins and coconut. Stir in potato mixture. Add cane syrup. Beat egg whites and fold into batter. Grease and flour tube pan. Bake for 1 hour at 350 degrees.
