Black Forest Cake

Crisco shorting
6 tbs flour
9 tbs clarified butter
6 eggs
1 tsp vanilla
1 cup sugar
1/2 cup flour
1/2 cup unsweetened cocoa

Filling:
3 cups heavy cream, chilled
1/2 cup confectioners sugar
1/4 cup Kirsch
1 envelope gelatin
1/4 cup water
1 cup drained sour cherries
1 cup Maraschino cherries
Grated sweet chocolate

Syrup:
3/4 cup sugar
1 cup water
1/3 cup Kirsch

Coat 3 cake pans with Crisco and sprinkle each with 2 tablespoons flour. Beat eggs, vanilla, small amount of sugar, gradually add remaining sugar. Beat till volume increases several times. Sift cocoa and flour together and add gradually folding in. Fold in clarified butter, do not over mix. Pour in pans and bake 10-15 minutes at 350F. Remove from pans and cool completely.

Filling:
Put gelatin in water, heat and then cool. Beat cream and add gelatin, sugar, and Kirsch.
