Cheese Cake 6

3 eggs
1-1/2 cups sugar
12 oz (1-1/2 cups) Ricotta or cottage cheese
1/2 cup milk
2 tsp grated lemon peel or use grated orange peel
5 cups cooked rice

Beat together eggs and sugar about a minute. Mash cheese slightly and mix with milk and lemon peel; add to egg mixture. Beat or process in blender until smooth. Stir in rice. Pour into a buttered 9-inch square baking dish. Bake at 350F for 1 hour. Serve warm. Top with lemon sauce, if desired.

Makes 9 servings.

NOTE:
Leftover cake may be covered with foil and reheated at 250F about 30 minutes to restore its original fresh moist texture and delicious flavor.
