Chocolate Mousse 2

1 tsp unflavored gelatin
1 tbs cold water
2 tbs boiling water
1/2 cup sugar
1/4 cup Cocoa
1 cup chilled whipping cream
1 tsp vanilla extract

In small bowl sprinkle gelatin over cold water; let stand 1 minute to soften. Add boiling water; stir until gelatin is completely dissolved and mixture is clear. Cool slightly. In small cold mixer bowl combine sugar and cocoa; add whipping cream and vanilla. Beat at medium speed, scraping bottom of bowl occasionally, until stiff peaks form; blend in gelatin mixture, beating well. Spoon into serving dishes. Chill about 1/2 hour.

Four 1/2-cup servings.
