Custard Filling for Pies

1-1/2 cups milk
1/2 cup sugar
2 egg yolks
2 tbs cornstarch
1/2 cup water
1 tbs butter
1 tsp banana extract
1/2 tsp nutmeg

Put milk and sugar into a sauce pan. Stir together and bring to a boil. In a bowl, blend egg yolks with cornstarch. Add water and mix well with egg beater until there are no lumps. Add to milk and sugar mixture in pan. Cook, stirring constantly until mixture thickens. remove move from heat. Add butter, extract and nutmeg. Pour onto un-baked pie crust. Place strips of dough on top of custard to form latticework, Bake at 350F for 20 minutes or until crust is brown.
