Snowball Cake

3 envelopes Knox gelatin (unflavored)
6 tbs ice water (1/3 cup)
1-1/2 cups hot water
1-1/2 cups sugar
1-1/2 tbs lemon juice
1-1/2 tsp salt
1-1/2 cups pineapple with juice (can substitute for favorite fruit)
1 medium size angel food cake (cake to be broken into bite size pieces)
1 large cool whip

Topping:
1 can small container cool whip
1 can coconut (optional)

Place in blender:
Gelatin and ice water (blend for 2 or 3 seconds)
Add hot water (blend for 2 or 3 seconds)
Add sugar, lemon Juice, salt and fruit (blend for 30 seconds).

Pour from blender into mixing bowl. Fold in large cool whip. Add angel food cake to mixture mixing thoroughly until all pieces of cake are covered with mixture. Oil loaf pan (13x9 inch) with corn oil or pam. Pour mixture into pan and put in refrigerator and let gel overnight. Frost with small cool whip and top with coconut. Keep refrigerated.
