Cherry Bounce

1/2 Gallon Wild Cherries
8 cups Distilled Water
8 cups Sugar
2 Fifths Sautérne or German Wine
2-3 ozs White Lighting or Pure Alcohol

*** Wash cherries in cool water and place in a dark jar. Make a simple syrup with sugar and water. Bring to a boil but do not boil. Pour on cherries while still warm. When lukewarm cap and let sit for 10 days in a dark place. After 10 days drain off liquid and reserve. Pour 2 fifths white wine (sauterne or german white wine) on cherries and allow to sit for another 10 days after crushing cherries. Separate cherries from wine and mix wine with the reserved liquid. Add white lighting or pure alcohol and let sit for a few days. Store in cool dark spot.
