Watermelon Ice

4 lb watermelon, cut from rind, seeds removed
3 tbs lemon juice
2 tbs sugar
1/2 tsp salt

Cut the melon into 1 inch chunks. Puree in a food processor or blender with all the other ingredients. Freeze. To serve, process desired amount to soften it. Serve immediately.

Makes 2 quarts.

A refreshingly cool treat on a hot day.
