Creamy Spinach Soup

1 cup finely chopped onions
1 small clove garlic, crushed
2 tbsp. vegetable oil
4 cup chicken broth
2 pkg. (10-12 oz. each) fresh spinach, finely chopped
1/2 cup evaporated milk
1 tsp. curry powder
1 tsp. salt
1/4 tsp. pepper
2 cup cooked brown rice
1 lemon, thinly sliced

Saute onions and garlic in oil until tender. Add chicken broth; bring to a boil. Stir in spinach, cover, and simmer about 10 minutes. Pour into a blender and puree. Return to saucepan. Add milk, seasonings, and rice. Heat throughly. Serve with a twist of lemon.
