Creole Green Pea Soup

2 cup peas, shelled or canned
1 onion, minced
2 potatoes, sliced thinly
1 tbsp. butter
4 cup boiling water
Salt and pepper

Boil peas in salted water until tender. Drain and reserve the boiled water. Press peas through a sieve and discard the skins. Brown onions in butter. Put the boiled water you reserved in a saucepan. Add the peas, onion, butter and sliced potatoes. Season with salt and pepper to taste. Bring to a boil and simmer, covered, for 35 minutes, or until potatoes have disintegrated. Stir in the well beaten egg yolk just before serving.
