First you make a roux; Brown flour in oil; add onions, celery, bell peppers. Saute until onions look brown, not burned. Add chicken and sausage. Boil about 2 hours or until meat is cooked. Add cleaned crabs and shrimp. Cook another half hour. Add seasonings, salt Cajun Blended and Cajun Herbed spices, red pepper and parsley. Add oysters and cook for 5 minutes. Add 1/4 teaspoon gumbo file, if desired.
