Shrimp in Puree of Potato Soup

6 oz. shrimp
4 potatoes
1 tbsp. flour
1 cup milk
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. parsley, minced
1 cup potato water
2-1/2 tsp. butter

Pare potatoes. Cook in boiling salted water until tender. Drain and mash smooth. Melt butter, blend in flour. Add milk gradually, stirring until mixture is smooth. Add parsley, potato water, salt and pepper. Simmer for 10 to 12 minutes, but do not boil. Add shrimp and heat to boiling.

Serves 4.
