Grilled Chicken and Sausage Gumbo

1 cup oil
1 cup flour
2 onions, chopped
2 bell peppers, chopped
2 cans diced Rotel tomatoes
12 cups water
Salt, pepper and hot sauce to taste
1 cup green onions, chopped
6 large boneless chicken breast
2 pounds sausage

Grill 6 large boneless chicken breasts and 2 pounds of sausage until meat is firm, but not completely done. Cut into bite-sized pieces and set aside.

In a large pot make a roux with one cup oil and flour. Add onions, diced tomatoes and bell peppers. Cook until onions are transparent, Add water, bring to a boil. Boil until roux is completely dissolved. Season to taste, lower heat to medium and add green onions. Add meat, and cook for about 1-1/2 hours. Serve over cooked rice.
