Cranberry Orange Dressing

1/2 cup chopped celery
1/2 cup chopped onion
1/3 cup margarine or butter
1 cup Quaker enriched corn meal
1 cup all-purpose flour
1 tbs baking powder
1-3/4 cups milk
One 7 oz pkg herb seasoned cubed stuffing mix
1 egg, beaten
1 tsp grated orange peel (optional)
One 14 oz jar cranberry-orange sauce

Microwave Oven:
Combine celery, onion and margarine in lightly greased 3qt. Microwavable casserole; cover. Microwave at HIGH 3 minutes or until vegetables are crisp-tender. Add combined remaining ingredients except cranberry-orange sauce; mix well. Cover; microwave on HIGH 5 minutes or until surface appears dry. Stir in cranberry-orange sauce; mix well. Microwave at HIGH 5 to 7 minutes or until heated through. Serve with poultry or pork.

Conventional Oven:
Preheat oven to 350F. Grease 3-qt. casserole. Melt margarine. Combine all ingredients except cranberry-orange sauce; mix well. Spoon into prepared casserole; cover. Bake 30 minutes. Stir in cranberry-orange sauce; mix well. Continue baking 15 to 20 minutes or until heated through.
