Eggplant Rice Dressing 3

1-1/2 cups eggplant, boiled, drained
3/4 cup chopped onion
1 cup chopped bell pepper
1/2 lb ground meat
1/4 cup cooking oil
2 tsp salt
1-1/2 cups cooked rice
1/4 tsp red pepper

Heat oil, saute onions, pepper, meat with seasonings. Cook 20 minutes, add eggplant. Add cooked rice. Dish and trim.
