Pimiento Rice

1 cup chopped onions
2 tbs butter or margarine
3 cups cooked rice, cooked in chicken broth
1 can (4 oz) diced pimientos
2 tbs chopped parsley
1/2 tsp salt
1/2 cup sliced almonds, optional

Cook onions in butter until tender. Add rice and heat through. Remove from the heat; add remaining ingredients. Toss lightly.

Microwave Instructions:
Place butter in a 1-1/2 to 2-quart microwave proof baking dish. Cook on HIGH (maximum power) 1 minute. Stir in onions and cook on HIGH 2 minutes. Add rice, cover, and cook on HIGH 3 minutes, stirring after 1-1/2 minutes. Add remaining ingredients. Toss lightly.

Makes 6 servings.
