Red Beans and Rice 4

- 7-1/2 lb red beans
- 10-1/2 lb smoked sausage cut in 1/2 inch pieces
- 7-1/2 lb extra long grain rice
- 3 lb onions, chopped
- 1/2 lb whole celery, chopped
- 3 lb bell pepper, chopped
- 1/2 head large garlic, chopped
- 1 bunch green onions, chopped
- 1 bunch parsley, chopped
- 2 pouches Lipton Dry Onion soup mix (1.25 oz)
- 1-1/2 tbs crab boil
- 1 oz Tabasco
- One 15 oz can Rotel
Brown sausage. Bring red beans to light boil. Drain water and wash beans. Add more water. Add all ingredients. Season to taste and cook until tender.
