Seafood Dressing

1 large onion finely chopped
1 large green pepper finely chopped
1 large celery stalk finely chopped
3 large cloves of garlic finely chopped
1 lb crabmeat (fresh preferably)
1 lb shrimp (fresh preferably)
1 large eggplant

Saute onion, green pepper, celery and garlic in butter. When seasonings are sufficiently wilted, add crab meat and shrimp. Allow to cook slowly in a covered dish for 20 to 25 minutes. As this mixture cooks, bring a pot of water to a boil. Immerse diced pieces of eggplant into boiling water and allow to remain for seven minutes. Remove and drain.

Add eggplant to sauteed mixture and stir well. Season with salt, red pepper and garlic powder to taste. Pour into baking dish and sprinkle bread crumbs on top. Bake approximately 30 to 35 minutes.
