Meatloaf Variants

2 lb Ground Beef
4 Strips Bacon
1 cup Bread Crumbs
2 Beaten Egg
1 sm Chopped Onion
1 tbs Parsley
1 Dash Salt
1 Dash Pepper
1/2 cup Milk

*** Combine all ingredients except bacon. Place in loaf pan with bacon on top. Bake 45 minutes at 350F.

NOTE: Half of the beef may be replaced with covered veal or pork. Add 1/2 cup parmesan cheese and chopped olives. Replace milk with tomato sauce (tomato soup or 1/2 cup catsup and water).

NOTE: Replace some beef with chopped ham, lamb or chicken. Add cooked peas, carrots or other vegetables.

Yield: 4 Servings
