Beef Eggplant Hash

1-1/2 lbs. raw beef, diced (use a tender cut)
1-1/2 lbs. raw eggplant, diced into 1 inch cubes
1-1/2, ribs celery, chopped
1 medium bell pepper, chopped
1 medium onion, chopped
1 garlic pod, diced
1 can (14-1/2 ounces) stewed tomatoes
1 teaspoon sugar
2-1/2 teaspoons salt
1 teaspoon cayenne pepper
Water (as much as necessary)

Preheat/bake oven: 400F. After meat is diced, season with salt and pepper. Place meat and all chopped ingredients into a 9-1/2 x 14 inch oblong dish. Pour can of tomatoes and enough water to be level with ingredients. Add sugar; stir well. Bake. About 4 times during cooking time, turn over ingredients with a spoon to prevent drying out. During last 15 minutes, if more gravy is needed, add water to desired consistency.

Serve over cooked rice.
