Brown pork in oil in skillet. Add diced onions, salt, pepper and garlic, cook till onions are translucent and brown. Pour chopped up tomatoes with juice in pot with chil1 peppers and 1-1/2 cup of water. Add pork and onion mixture, Simmer covered for 45 minutes. Take liquid from pot and blend with flour. Be careful to add a little liquid at a time, so you don't get lumps. Once you have mixture smooth, add back to pot. Add cilantro. Cook for 2 hours over low heat, stirring occasionally (even better if left overnight). Amounts of ingredients can be varied to personal taste. Serve with tortillas or pour over spaghetti, sprinkle with Parmesan cheese.
