Lasagna 1

1 onion chopped
2 stalks celery chopped
1 bell pepper chopped
1 pound pork and beef, ground and mixed
1 teaspoon fennel
1 can Rotel
1 package grated Mozzarella
1 package Provolone, plain
1 box lasagna
1 cup chopped parsley
1 small can tomato sauce
1 regular can stewed tomatoes
3 pods garlic chopped
2 quarts boiling water

Preheat oven to 250F. In a heavy skillet place 2 tablespoons oil and saute seasonings, leaving garlic for last. Add ground meat and fennel and saute. Add tomato sauce and Rotel. Simmer for 15 minutes once seasonings are done. Boil lasagna for 20 minutes. In a baking dish, layer lasagna, meat sauce, then cheeses. Reheat layers and end with cheeses on top. Bake for 30 minutes at 350F. Slice into squares and serve with salad and hot bread.
