Gourmet Chicken Bundles

4 chicken breasts, deboned
4 slices ham, boiled
4 slices mozzarella cheese
4 tablespoons Italian bread crumbs
1/4 cup medium dry sherry (white)
1/4 pound butter or margarine
Salt and black pepper to taste
Dried parsley, chopped

Special utensil: Meat mallet.

Preheat oven to 350F. With meat mallet, pound chicken breasts to 1/4 inch thickness. Sprinkle garlic powder, salt and pepper. Place boiled ham and cheese over chicken. Sprinkle with bread crumbs. Roll over, starting at smaller end, Secure with toothicks, if needed. Place in greased baking dish. Combine sherry and butter; heat briefly, Pour over chicken bundles and sprinkle lightly with parsley. Bake uncovered 20-25 minutes. Pour remaining juices over bundles and serve with vegetable of choice.
