Chicken Fettuccine 2

1/4 cup margarine
1 cup milk
1 hen or chicken, deboned
1/4 cup flour
1 cup chicken broth
12 oz cooked fettuccine noodles
2 cups sour cream
1 pkg of frozen spinach
One 6 oz jar mushrooms
One 4 oz pimientos
1/2 cup chopped onions
1/2 cup chopped celery
1/3 cup lemon juice
1 tsp paprika
1 tsp salt
2 tsp seasoning salt
1/2 tsp cayenne pepper
1 tsp black pepper
1-1/2 cup Monterrey Jack cheese, grated

Boil chicken, debone and chop meat. Save I cup of broth. Boil the fettuccine noodles in water. Melt margarine, saute onions, celery until clear. Add flour, stir. Add broth. sour cream, mushrooms, pimientos, lemon juice, all seasonings. Cook spinach for 5 minutes, drain. Add spinach to above mixture. Mix fettuccine to mixture. Add chicken. Place the mixture in a casserole dish and top with cheese. Bake for 30 minutes at 350F degrees.
