Liver a La Royal Street

1 lb calf liver
1-1/2 tbs flour
2 tbs cooking oil
1 tsp salt
1/4 tsp red pepper
2 onions, chopped
2 cloves garlic, minced

Cook liver with flour. Brown on both sides in hot fat in skillet. Season with salt and pepper. Add onions and garlic. Saute until liver is limp. Add 2-1/2 tablespoons water, simmer for 30 minutes. Serve over hot rice.
