*** Separate eggs. Beat egg whites in a small bowl until stiff. Combine shredded cheddar cheese, salt, flour and cayenne. Beat in egg whites. Beat egg yolks and water in separate bowl until well blended. Place crushed bread crumbs in another bowl. Drop in a tsp of cheese mixture into bread crumbs. Roll in crumbs until cheese forms a ball. Roll ball in egg yolk then bread crumbs again. Pour oil into skillet and heat until it reaches 375F. Drop cheese balls a few at a time in oil. Brown for a few minutes. Drain on towel.
