*** Thaw frozen store bought puff pastry. Sauté scallions and onions in butter till tender. Add flour. Remove from heat and blend in cream and sherry. Return to heat, stirring constantly till smooth and slightly thickened. Remove from heat, stir in chopped shrimp, pimento and salt. Roll out each pastry sheet. Cut into 8 squares per sheet. Place 1 tbs of shrimp filling into center of each square. Fold over square to make triangle. Seal edges by pressing with a fork. Bake on ungreased baking sheet for 15 minutes in 375F oven. Serve warm.
Note: There are 4 sheets per package of frozen puff pastry.
