Stuffed Zucchini

4 large Zucchini
4 Slices Bacon
1/2 cup Minced Onion
2 Cloves Minced Garlic
1 cup Bread Crumbs
1/2 tsp Basil
1/2 tsp Marjoram
1 tbs Parsley
1 cup Grated Cheddar Cheese
2 Beaten Egg
Oil
Dash Black Pepper

*** Place zucchini in pot with one inch of boiling water. Cover and steam till almost tender, 7 minutes. Drain and rinse with cold water. Cut in halves lengthwise. Scoop out centers, leave a 1/4 inch shell. Turn shells upside down on paper towels. Rub with oil. Fry bacon, onions and garlic till soft. Mix bread crumbs, basil, marjoram, bacon mixture, parsley and scooped out centers of the zucchini. Stir in beaten eggs and cheese. Place shells in shallow baking dish and fill each shell with stuffing. Bake for 30 minutes in a 350F oven. Cool slightly and cut into bite-size pieces. Serve warm.
